Good to know

An oxygen donor. Saltpeter is an oxidizer, carrying its own oxygen and handing it off readily, which lets it feed fire and once made it the heart of gunpowder. In curing, bacteria turn its nitrate into nitrite, which fixes meat's pink color and, crucially, blocks botulism. That same oxygen-giving nature speeds the rotting of a treated stump, and is why it must be stored far from fuels and organics.
