How much citric acid do I add per quart when canning tomatoes?

A small measured amount goes into each jar before packing, following the USDA-recommended figure. Many modern tomatoes are not acidic enough on their own, so the added acid is what keeps botulism from growing.

Yes. Lemon juice varies in acidity from batch to batch, while citric acid powder gives the same pH drop every time, dissolves instantly, and adds very little flavor.

How long does citric acid last in storage?

Kept dry and sealed, it stays chemically stable indefinitely. Moisture makes it clump without weakening it, and it should stay out of metal containers because it corrodes them.

What ph do canned foods need to be safe?

Canned food has to be acidic enough that the botulism bacterium cannot grow. Tomatoes and figs can fall short of that line, which is why they get added acid before water bath canning.
