Citric Acid

Good to know

A claw for metals. Citric acid is a chelator: its molecule has claw-like arms that clamp onto metal ions and hold them in solution, and that single trick explains its whole range. It lifts rust and scale by grabbing iron and calcium off surfaces, locks up the trace metals that speed food spoilage, and keeps minerals like calcium and magnesium soluble in the gut, the same trick that makes citrate supplements easy to absorb.
