How do I keep fruit leather from turning brown?
Mix a small amount of food-grade ascorbic acid into the purée before drying. It works as an antioxidant that blocks the browning reaction in light-colored fruit and protects color, flavor and vitamin content.

How much ascorbic acid do I add to fruit leather?
Only a small measured amount goes into each batch of purée. Adding extra makes the leather sour without preserving it any better, and only pure food-grade powder belongs in it, not vitamin tablets.

What temperature do I dehydrate fruit leather at?
Dry the purée in a thin, even layer at a low dehydrator heat until the leather is pliable, dry to the touch and no longer sticky. Thickness and humidity change how long that takes.

How do I store homemade fruit leather long term?
Make sure the leather is fully dry, since leftover moisture grows mold. Roll strips in parchment and keep them airtight, cool and dark, and use the freezer for the longest storage.

How long does fruit leather last with vitamin c added?
Treated leather keeps its color and flavor noticeably longer than untreated leather stored the same way. Freezing stretches storage far beyond what room temperature allows.
