Red flags: stop and inspect

Mold

Any fuzzy or colored growth.

Off odor

Sour, rancid, or fermented smell.

Slime

A sticky film on the surface.

Swollen can

A bulging or popped lid.

Discoloration

Green, gray, or an odd tint.

Wrong texture

Mushy, slimy, or hard.

The 3-step test

  2. Smell Off or sour
  3. Taste Only if 1&2 pass
  4. In doubt Throw it out

Usually safe

Discard on sight any bulging or spurting cans, slimy or sour meat, musty or buggy grains, and rancid, bitter oils or nuts. Otherwise run the 3-step test: look for mold and color changes, smell for off or sour odors, and taste only if both pass. When in doubt, throw it out.
