Spotting Spoilage

Most spoiled food fails one of a few sensory checks. Learn these signs once and you can judge almost any item, no expiration date required. When a food shows any red flag below, do not taste it to confirm.

Fuzzy or colored spots. Discard the item, not just the spot.

Off or sour odor

A sharp, rancid, or fermented smell.

Sliminess

A sticky or slimy film on meats, cheese, or produce.

Swollen packaging

Bulging cans or popped lids signal gas from bacteria.

Discoloration

Green, gray, or unusual color shifts.

Odd texture

Mushy, clumped, or unexpectedly hard.

The taste test is a last resort, never a first one

Only taste a food after it clearly passes the look and smell checks, and then only a tiny amount. In a survival setting, where clean water and medical care may be scarce, the cost of a wrong guess is high. When in doubt, throw it out.

How do I tell if food has gone bad?

Run the sensory test in order: look for mold, color, and texture changes, then smell for off or sour odors. Taste a tiny amount only if it clearly passes both. Check the package for bulging or leaking as well. If any red flag shows, do not taste it. When in doubt, throw it out.

What are the signs of spoiled food?

The universal red flags are visible mold, an off, sour, or rancid odor, a slimy or sticky film, swollen packaging like bulging cans or popped lids, green or gray discoloration, and odd texture such as mushy, clumped, or unexpectedly hard. With mold, discard the whole item, not only the spot.
