How do I absorb more minerals from stored food?

A small amount of citric acid in cooked food binds minerals into citrate, a soluble form the body takes up easily. Soaking, sprouting, or fermenting grains and beans helps further by breaking down phytic acid.

How much citric acid do I add to cooking water?

Only a small pinch, added late in cooking and fully dissolved. More does not improve absorption, and acid added too early keeps beans and lentils tough.

Can I add citric acid to drinking water?

A pinch works in mineral-rich drinks like a homemade rehydration drink or broth. Dissolve it completely, because undissolved granules can irritate teeth and stomach, and rinse your mouth with plain water afterward.

Does citric acid help with iron and calcium absorption?

It helps calcium and magnesium most, because the citrate form dissolves without needing strong stomach acid. The effect on iron is smaller, and vitamin C does more for iron than citric acid does.

How long does citric acid powder last?

It is stable indefinitely as long as it stays sealed and dry. Glass or plastic containers are the right choice, because citric acid corrodes metal.
