Vanilla Extract

Why pure vanilla extract keeps indefinitely and imitation fades in a few years, how to store it, how to tell the difference on the label, making your own from beans and spirits, and its uses beyond baking.

Where this sits on the food shopping list

Pure vanilla extract is vanilla beans steeped in alcohol, at least 35 percent by law, and alcohol that strong preserves anything in it indefinitely. It's on the field guide's Indefinite 15 and it improves with age the way a spirit does. Imitation vanilla, which is synthetic vanillin in water and a little alcohol, fades in a few years. The bottle is small, it keeps forever, and it's the difference between a stored-food dessert and a sad one.

Which to buy

Pure vanilla extract, where the label says pure and lists vanilla beans, alcohol and water, in the largest bottle you can afford; it does not go off. Imitation vanilla is fine for a year's baking and is not a storage item. Or make it: a few vanilla beans split and dropped into a pint of vodka or bourbon, left in the dark for two months and topped up as it is used, is a lifetime supply from a one-time purchase of beans, and the beans themselves keep for years in a sealed jar.

What to store, how much of it for one person for one month, and how long it keeps. One page with checkboxes, built from the Survival Foods field guide. Print it, multiply by your people and months, and take it to the store.

How to store it

A sealed bottle in a cool, dark cupboard, cap tight, so the alcohol does not evaporate; that is all it asks. Never the fridge, where it clouds and the flavor dulls. Keep it away from the stove. A bottle of pure extract or a jar of homemade can sit for decades.

How to tell it has turned

Pure extract does not go bad. Cloudiness or sediment is vanilla solids and is harmless; shake it. An opened bottle that has lost most of its alcohol to evaporation is weaker and still usable. Imitation vanilla is done when the smell has gone faint; it was never unsafe. Mold is not possible at 35 percent alcohol.

Keep it

Cloudy or sedimented pure extract, a dark old bottle, homemade extract with beans still in it.

Discard on sight

Imitation vanilla that has lost its smell, which is a quality call, not a safety one.

How much, and how to use it

A teaspoon in a batch of pancakes, oatmeal, pudding or quick bread from the stored flour, sugar and powdered milk, and the food tastes like something someone wanted to make. The Indefinite 15 list below adds the other jobs: a drop on a cotton ball is an air freshener and a mild bug repellent, and the aroma is the calming one. Homemade extract in bourbon is also a gift and a trade good that costs almost nothing to make.

What else it does

  • Baking & drinks
  • Perfume
  • Air freshener
  • Bug repellent
  • Calming aroma

Shelf-life figures are from the Survival Foods field guide; fridge, freezer and pantry times are from the USDA cold and pantry storage charts. Run the look, smell, taste check before eating anything past its date.
