How long does dried herbs & spices last?

Label dates say 1 to 3 years, but dried herbs and spices last longer than that when stored well. What they lose over time is potency, so the practical limit is faded color, aroma, and flavor.

How do I store dried herbs & spices long term?

Keep them airtight and in the dark. Moisture is the enemy, so watch for clumps or mold, and expect potency to fade slowly even when storage is good.

How do I tell if dried herbs & spices has gone bad?

Crush a pinch to test potency. Faded color, aroma, and flavor mean the spice is past its best, while mold or clumps signal moisture has gotten in.
